What makes the Apple Sours Mocktail so special?

This mocktail is a perfect balance of flavors that will tantalize your taste buds. The apple provides a refreshing and fruity base, while the lime adds a kick strong enough you don't need to add alcohol to your drink (though you could try vodka, brandy, or even tequila for something different)! The chamomile tea brings a lingering subtle floral note, complemented by the warm undertones of vanilla and the sweetness of honey.

Chamomile Apple Sours Mocktail

Recipe makes ten 80ml serves

Serve in: a martini or sherry glass

Ingredients:

  • 500ml apple juice
  • 100ml lime juice
  • 4 heaped teaspoons of Noble & Sunday Chamomile Tea
  • 180ml boiling filtered/spring water
  • 62.5ml/80g honey (we love Rewarewa, but try your favourite)
  • 1 tsp good quality vanilla extract
  • 10 slices of apple or lime to garnish

Note: Plan ahead and chill your apple and lime juice in advance to speed up the process.

Prep:

Chamomile honey concentrate:

  1. Brew 4 heaped teaspoons of chamomile tea in 180ml water for 10 minutes.
  2. Strain tea, squeezing gently to remove excess liquid. Ensure you have 140ml of tea; top up if needed.
  3. Add honey and vanilla while warm, stirring to dissolve.
  4. Chill until ready to mix up your mocktail.

Mix your mocktail and chill until serving:

  1. Combine 500ml apple juice, 100ml lime juice, and 200ml chamomile honey concentrate, mixing thoroughly.
  2. Chill until ready to serve.

Single-serve option:

If you'd rather make these as you go, in each glass combine:

  • 50ml apple juice
  • 10ml lime juice
  • 20ml chamomile honey concentrate

Serve:

Pour 80ml of chilled mocktail per serve. We love serving this up in a martini or sherry glass, but you could also use an old-fashioned glass with a giant ice cube.

Garnish with an apple slice and enjoy!
