Previously called Imperial Sencha, this green tea has a mild smooth taste with pale green hues. A perfect beginner's green tea.
Compared with black tea, this green tea contains less caffeine and more L-theanine (an amino acid that's calming and can balance the effects of caffeine). This is a drink you can enjoy and feel good about drinking.
Not a green tea fan? It's possible you just need to nail your brew game. Getting the perfect brew of green tea is simple, though often missed; getting the temperature and time just right. Many people find green tea too astringent because the cuppa is brewed too hot at 100˚c. Green tea is delicate; it requires cooler water during brewing.
Steeping your green tea at 80˚c brings out all the benefits of the green tea while leaving the bitter tannins within. This brew will yield a sweeter and much smoother brew with complex flavours not overpowered by tannins.
Brew:
- 1 slightly heaped tsp per 250ml
- Boil water then let cool to 80˚c (or add 20% cold water to freshly boiled water)
- Steep for 2 mins and pour off.
- Serve clear or with honey
You can re-brew this tea 2-3 times or continue until you've extracted all the flavour, extending brew time by 1 min each time.
